Mom's Cinnamon Rolls
1 package Yeast
1 C. Warm Milk
1/4 C. White Sugar
2-1/2 C. Flour, divided
1 t. Salt
2 Eggs, beaten
1/4 C. Butter, melted
1/4 C. Brown Sugar
1 t. Cinnamon
Dissolve yeast in milk. Add white sugar and 1 cup flour. When bubbly add salt, eggs, butter and remaining flour. Just stir until well mixed. Place in a lightly greased bowl with lid and let rise in a warm place until double in size. Punch down and roll out on floured surface. Mix brown sugar and cinnamon and sprinkle on dough. Roll up as you would for a jellyroll. Cut in slices and place in baking pan, sides almost touching. Let rise until about double in size again. Bake at 425 degrees for 8 - 10 minutes. Ice with your favorite icing.
Yield: 12 - 15 rolls
