Featured Recipe for October:
3 C. Ritz Crackers, crushed
4 C. Rice, cooked
1 medium head Lettuce, chopped
3 Tomatoes, chopped
1-1/2 C. Green Pepper, diced
1-1/2 C. Onion, diced
2 C. Carrots, shredded
12 oz. package shredded Cheddar Cheese
1 lb. Ground Beef, browned and mixed with 1 qt. Spaghetti Sauce
2 cans Cheddar Cheese soup, mixed with 1 can milk, 1 C. Sour Cream and 1 lb Velveeta Cheese
3 C. crushed Taco-flavored Chips

Prepare ingredients as stated. (The rice, spaghetti sauce and cheese soup are served hot.) Serve in the order given and place a little of everything on top of each other on your plate. Your "haystack" may get pretty large. Dig in and enjoy!

Yield: 8 - 10 servings

Family Secret: You can add or subtract from this list of ingredients. The amounts given here are based on what our family likes. You may have to adjust! If you don't care for cheese sauce, a sweet and sour salad dressing is good on it too. This is a fun meal to make for a large group.
