Cinnamon Banana Muffins
1 C. Brown Sugar, packed
2 ripe Bananas, mashed
1/2 C. Chopped Nuts
1 C. Margarine, divided
1/2 C. White Sugar
2 Eggs
1-3/4 C. Flour
1 T. Cinnamon
1 t. Baking Powder
1 t. Baking Soda

Glaze: 1-1/4 C. Powdered Sugar
3 oz. Cream Cheese, softened

In a small saucepan combine brown sugar with cup margarine. Stir over medium heat until melted. Add bananas and nuts. Stir until well coated. Cool to room temperature. Cream remaining margarine and white sugar. Beat in eggs. Sift together flour, cinnamon, baking powder and baking soda. Add to creamed mixture. Stir in banana mixture. Fill greased muffin pans 2/3 full. Bake at 350 degrees for 20 - 30 minutes. Cool. Combine powdered sugar and cream cheese and spread on muffins.

Yield: 1-1/2 dozen
